Peel and slice apples, add juice from 1 lemon and 200 g sugar, sauté, then add finely chopped rosemary and set aside to cool.
Whip egg whites into a stiff foam, add corn starch.
Mix flour with the butter, 200 g of sugar, vanilla sugar, egg yolks and baking powder. Knead well and place in fridge to cool. Once the dough is cooled, roll out flat, divide in half, place one half in pan, place apples on the dough, spread egg whites over the apples, and cover with remaining dough. Bake for 40 minutes at 170°C. Serve with vanilla ice cream and decorated with sugar.
