Shoulder

part of the meat obtained from the foreleg without its last segment, with or without the bone. Shoulder is most often used for roasting or braising. It is used to prepare rashers, as well as white sausage and minced meat cutlets, and tinned foods and goulash. It can be used as stuffing for potato dumplings with meat, dumplings and stuffed cabbage.
